Phil Vaughan RIP 2020

Phil Vaughan- Nee Goulding departed this life on December 21st, 2020. She was in her 95th year and surrounded by all her family. Philomena was baptised as Bridget Goulding from Keylod, Knockanure, Co Kerry. She is predeceased by her brother Jackie Goulding, and much earlier in life by Jackie’s twin Donal,           and Mary. Philomena grew up on the Goulding farm in Knockanure, a daughter of John and Dora Goulding. The farm is in the hands of John and Mary Goulding today. She preferred her second name Philomena and was known as Phil from when she attended Knockanure Old National School in the 1930’s.

Attending Presentation Secondary School in Listowel from 1938 to 1943 Phil travelled from Trien, Kilmorna where she spent her school years at her grandmother O’Sullivan s farm.  She trained in Domestic Economy at Carrick on Suir initially, and further progressed to Cathal Brugha Street where her studies brought her in to the world of hotelkeeping.

Having subsequently trained in Waterville at the Butler Arms Hotel, at Benners, Tralee and in The Travellers Friend, Castlebar, Phil took a post of Manageress at the Ardhu House Hotel in Limerick where she worked up until 1957. During that time she gained a reputation as an excellent organiser of weddings, functions and competent host. She married Micheal Vaughan of Lahinch and moved there in 1957. Together they owned and ran Vaughans Hotel, later called the Atlantic Hotel. The dynamic couple later purchased the Aberdeen Arms Hotel in Lahinch and successfully ran that hotel for over thirty years before retiring in 1988.

Phil was often mentioned in International travel guides for the quality of her cuisine and baking. Her recipes featured in Gourmet magazine occasionally.

Phil never lost touch with her native village and often visited relatives and neighbours over the years. She took great pride in the progressive farming methods of her brother and her nephews in North Kerry. Equally too she delighted in the careers of her nieces and the continuation of the Goulding family’s farming endeavours.

In Lahinch, County Clare, her own family continue to be involved in hotelkeeping in the village at Vaughan Lodge Hotel and we are very proud to have been mentored all our lives by such a remarkable woman.
